Guest Post: Carrot Cake Pancakes

One of my best friends from High School has jumped on the blogging wagon y’all and I couldn’t be more excited about it. Introducing Nina from “Turcs and Kiddos.”

Nina is a stepmom to 2 girls, ages 13 and 8, and a mom to 2 boys, ages 3 and 1 1/2, works in the wine and spirit industry, and lives in Connecticut. She blogs about her blended family that’s built with a whole lot of love, and a whole lot of chaos. On her website, turcsandkiddos.com (she’s also on Instagram @turcsandkiddos) she shares recipes her kids actually eat, some of her favorite things (including her wine picks PRAISE), and tips for dealing with the ups and downs of raising a blended family.

Even in High School, I knew Nina was destined to be a great mom. She was always babysitting, and always talking about her younger brother, who’s now so old I can’t even think about it. When I was about halfway through my pregnancy, Nina and I had lunch, and she brought me a ton of stuff her boys had grown out of, and patiently helped me figure out everything I needed to know.

Did I have a Dock-a-Tot…”no, do I need one?” yes, and I’ve got mine in my car for you to have.

Has anyone told you about the Night Sweats? “nope.” Okay, so after you give birth….

Honestly, it is a TRUE friend who will willingly give you their Dock-a-Tot and tell you about night sweats over soup and salad. And you know what, I am so, so thankful.

She’s really good about getting her kids involved in the kitchen, and I’m thrilled that she wants to share her recipe for Carrot Cake Pancakes here. I am dying to make these for Ellie. She’s just started eating breakfast (in addition to lunch, dinner, and breast milk 4 times a day), and I am always looking for things she can eat herself, so she can bring it with us on our morning walks. These have veggies and fruit mixed in, and they’re super simple—I bet you’ve got all the ingredients in your home even now.

What You’ll Need:

  • 1 TBSP coconut oil

  • 1 egg

  • 1/2 cup flour

  • 1/2 cup rolled oats

  • 1.25 tsp cinnamon

  • 1/2 cup milk

  • 1 apple, grated

  • 1 carrot, grated

What You Do:

  1. Combine all ingredients in a mixing bowl. If the batter seems too dry, add more milk.

  2. Heat coconut oil in a pan, and drop in spoonfuls of batter.

  3. Cook until tops bubble, and then flip and cook for another minute or 2.

  4. These freeze really well, but are also delicious fresh off the pan!
